One major factor is a flavor industry largely controlled by four big companies with a vested interest in keeping “natural flavors” a mystery box.
Pulling back the veil of flavor creation revealed something surprising - at its most essential, making flavors had a lot in common with the world of herbalism and essential oils.
Why do two practices so similar in their raw materials, end up with such different products?
Hydrosols are the missing link. The water soluble coproduct of essential oil production, hydrosols carry many of the flavor constituents of plants and similar benefits to their essential oil cousins. Everyone knows oil and water don’t mix, but many flavors contain oils. To mix them with water, you need to add surfactants and emulsifiers (conveniently hidden behind “natural flavors” on the ingredient list). Water-based hydrosols naturally mix with water, with no added surfactants or emulsifiers. While hydrosols and essential oils are born of the same process, hydrosols are much safer to drink. A process that yields mere drops of essential oils, yields gallons of hydrosol, meaning they are much more dilute and gentle.
